饮酒“上头”的评价方法及其应用(116)

摘要 饮酒“上头”除了产生头部不适症状如头痛、头晕外,身体和精神方面的不适也属于“上头”的范畴。产生“上头”的原因与饮酒引起的大脑缺氧、硫胺素(维生素B1)和矿物质缺乏、携带乙醛脱氢酶(ALDH2)基因等有关。目前研究“上头”评价方法有酒精宿醉严重程度量表(AHSS)、急性宿醉量表(AHS)、宿醉症状量表(HSS)、饮后感受评价量表(Hangover evaluation scale, HES)4种方法,通过科隆巴赫系数(Cronbach′s alpha)的对比,4种方法的可信度排序为HES>AHSS>HSS>AHS。通过HES方法在酒体升级中的应用,验证了HES法的科学性,认为是一种有效的评价饮后感受的方法。

英文摘要 In addition to the related uncomfortable symptoms such as headache and dizziness after over-drinking, the physical and mental discomfort also belongs to the domain of hangover. It was reported that hangover was induced by alcohol-induced brain hypoxia, thiamine (vitamin B1) and mineral deficiencies, and carrying aldehyde dehydrogenase (ALDH2) gene etc. At present, there are four methods for hangover evaluation including Alcohol Hangover Severity Scale (AHSS), Acute Hangover Scale (AHS), Hangover Symptoms Scale (HSS) and Hangover Evaluation Scale (HES). After a comparison of the four methods based on Cronbach′s alpha, the credibility order was HES> AHSS> HSS> AHS. HES method was further applied in the upgrading of a new liquor product to verify its scientificity. It was believed that HES was an effective method for evaluating hangover symptoms.
