HS-SPME-GC-MS结合保留指数分析黄酒月英醉的易挥发成分(96)

摘要 采用顶空固相微萃取(Head Space Solid-Phase Micro-Extractions, HS-SPME)与气/质联用(Gas Chromatgraphy-Mass Spectrometry, GC-MS)技术,并结合程序升温保留指数(Temperature-programmed retention index,PTRI)对黄酒月英醉的易挥发成分进行了定性及定量分析。通过单因素和正交试验考察了萃取头、萃取时间、解析时间及萃取温度对萃取效果的影响,建立了月英醉黄酒易挥发成分的HS-SPME-GC-MS分析方法,共检出75种化合物,确定结构70种,占易挥发成分总量的99.33 %,其中酯类、醇类、酚类、酸类、醛酮类分别占易挥发成分的38.10 %、27.00 %、18.50 %、10.85 %、1.58 %,此外,还检测到吡嗪类化合物、呋喃类化合物、烃类化合物等。

英文摘要 The volatile compounds of Yueyingzui yellow rice wine were analyzed qualitatively and quantitatively by headspace solid phase micro-extraction (HS-SPME) and gas chromatography-mass spectrometry (GC-MS) combined with retention index (RI). Through the analysis of the effects of SPME fiber type, extraction time, resolving time and extraction temperature on the extraction of volatile compounds by single factor test and orthogonal experiments, the analytic method of the volatile compounds in Yueyingzui yellow rice wine was established. The results showed that 75 kinds of compounds were detected in the yellow rice wine, and 70 of them were structurally identified (99.33 % of the total amount of volatile compounds), and the main volatile compounds included esters, alcohols, phenols, acids, aldehydes and ketones (38.10 %, 27.00 %, 18.50 %, 10.85 %, 1.58 % of the total amount of volatile compounds) etc. Besides, other compounds including furans, aromatic compounds, phenazine were also identified.
